- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14.5 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 2 cups cooked penne pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Add onion and garlic; sauté until softened, about 2 minutes.
- Stir in chicken broth, crushed tomatoes, Italian seasoning, and red pepper flakes. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add cooked pasta and cheeses; stir until melted and combined.
- Serve hot, garnished with fresh basil.
Notes
For a spicier version, increase the red pepper flakes. Ensure chicken is fully cooked to 165°F.
