Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups cooked penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add onion and garlic; sauté until softened, about 2 minutes.
  4. Stir in chicken broth, crushed tomatoes, Italian seasoning, and red pepper flakes. Bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Add cooked pasta and cheeses; stir until melted and combined.
  7. Serve hot, garnished with fresh basil.

Notes

For a spicier version, increase the red pepper flakes. Ensure chicken is fully cooked to 165°F.
