- 4 boneless, skinless chicken breasts
- 1 tablespoon vegetable oil
- 8 slices bacon
- 1 cup sliced mushrooms
- 2 cups shredded Monterey Jack cheese
- 1/2 cup honey mustard sauce
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper, then grill or pan-sear until golden brown on both sides.
- In a skillet, cook bacon until crispy; set aside.
- In the same skillet, sauté mushrooms until tender.
- Place cooked chicken in a baking dish, top with mushrooms, bacon, and shredded cheese.
- Bake in the preheated oven for 15-20 minutes, or until cheese is melted and bubbly.
- Drizzle with honey mustard sauce before serving.
Notes
For a crispier bacon, bake it separately in the oven. Pair with steamed vegetables for a complete meal.
