Description

These Almond Cherry Cookies are soft, chewy treats packed with the nutty flavor of almonds and the tart sweetness of cherries, perfect for a quick dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup ground almonds
  • 1 cup dried cherries
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract to the mixture and beat until well combined.
  4. In another bowl, whisk together the flour, ground almonds, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cherries.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a softer cookie, avoid overbaking. These can be stored in an airtight container for up to a week.
