Description

A classic sweet and crunchy snack made with popcorn coated in caramel.


Ingredients

Scale
  • 7 quarts plain popped popcorn
  • 2 cups dry roasted peanuts (optional)
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1 cup margarine
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Place the popcorn in a large bowl and preheat oven to 250 degrees F (120 degrees C).
  2. In a saucepan over medium heat, melt butter.
  3. Stir in brown sugar, corn syrup and salt.
  4. Bring to a boil, stirring constantly.
  5. Boil without stirring for 5 minutes.
  6. Remove from heat and stir in baking soda and vanilla.
  7. Pour over popcorn and stir to coat.
  8. Bake in preheated oven for 1 hour, stirring every 15 minutes.

Store in an airtight container for up to a week.
