- 3 large apples, peeled, cored, and diced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- Optional: 1 cup chopped walnuts
Instructions
- Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 10-inch bundt pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, mix the diced apples with granulated sugar and brown sugar. Let sit for 10 minutes.
- Add the vegetable oil, eggs, and vanilla extract to the apple mixture and stir until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
- Once cooled, dust with powdered sugar or drizzle with glaze if desired.
