- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 cups cream cheese, softened
- 1 1/4 cups sugar
- 4 large eggs
- 1 1/2 cups apple cider, reduced to 1/2 cup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 cups apples, peeled and diced
Instructions
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth. Add eggs one at a time, beating after each addition.
- Stir in reduced apple cider, vanilla extract, cinnamon, and nutmeg. Fold in diced apples.
- Pour the mixture over the crust and bake for 60-70 minutes, or until the center is set.
- Cool in the pan for 10 minutes, then refrigerate for at least 4 hours before serving.
Notes
For best results, use fresh apple cider and reduce it slowly to concentrate the flavors.
