Description

Soft spiced cookies with a creamy filling, perfect for fall flavors.


Ingredients

  • For the cookies:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple cider
  • For the filling:
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons apple cider

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in the egg and apple cider.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the sheets for 5 minutes, then transfer to a wire rack.
  7. For the filling, beat butter until creamy. Gradually add powdered sugar, vanilla, and apple cider, beating until smooth.
  8. Once cookies are completely cool, spread filling on the flat side of one cookie and sandwich with another.

Notes

Store in an airtight container for up to 3 days. For a stronger apple flavor, use fresh apple cider.
