Description

Soft and chewy cookies with a cinnamon-sugar coating and fresh apples.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apples (such as Granny Smith)
  • For the coating: 1/4 cup granulated sugar and 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon cinnamon.
  3. In a large bowl, cream the butter and 1 cup sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped apples.
  6. In a small bowl, mix together 1/4 cup sugar and 1 tablespoon cinnamon for the coating.
  7. Shape the dough into 1-inch balls and roll each in the cinnamon-sugar mixture.
  8. Place the balls on the prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Ensure apples are finely chopped for even distribution. Store in an airtight container for up to 3 days.
