A flavorful lasagna combining artichokes, spinach, and chicken for a delicious meal.

- 9 lasagna noodles
- 2 cups canned artichoke hearts, drained and chopped
- 2 cups fresh spinach, chopped
- 1 cup cooked chicken breast, shredded
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 jar marinara sauce
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a bowl, mix ricotta cheese, spinach, garlic, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer noodles, ricotta mixture, artichokes, chicken, and mozzarella cheese. Repeat layers.
- Top with Parmesan cheese and bake for 30-35 minutes until bubbly and golden.
- Let cool for 10 minutes before serving.
Notes
For a vegetarian version, omit the chicken and add more vegetables.
