- 1 bunch asparagus, trimmed
- 2 cups cherry tomatoes, halved
- 1 ball burrata cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Blanch the asparagus in boiling water for 2-3 minutes, then immediately transfer to ice water to cool.
- Halve the cherry tomatoes and place them in a large bowl.
- Add the cooled asparagus to the bowl with the tomatoes.
- Tear the burrata cheese into pieces and arrange on top of the vegetables.
- Drizzle with olive oil and season with salt and pepper to taste.
- Toss gently and serve immediately.
