Description

A fresh and vibrant salad featuring blanched asparagus, juicy cherry tomatoes, and creamy burrata cheese, perfect for a light summer meal.


Ingredients

Scale
  • 1 bunch asparagus, trimmed
  • 2 cups cherry tomatoes, halved
  • 1 ball burrata cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Blanch the asparagus in boiling water for 2-3 minutes, then immediately transfer to ice water to cool.
  2. Halve the cherry tomatoes and place them in a large bowl.
  3. Add the cooled asparagus to the bowl with the tomatoes.
  4. Tear the burrata cheese into pieces and arrange on top of the vegetables.
  5. Drizzle with olive oil and season with salt and pepper to taste.
  6. Toss gently and serve immediately.
