A classic Mexican breakfast dish featuring fried eggs on tortillas with salsa and beans.

- 4 large eggs
- 4 corn tortillas
- 1 cup refried beans
- 1 cup salsa
- 1 avocado, sliced
- 1/4 cup crumbled queso fresco
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a skillet over medium heat.
- Fry the tortillas one at a time until crisp, about 1-2 minutes per side. Remove and drain on paper towels.
- In the same skillet, cook the eggs sunny-side up until the whites are set, about 3-4 minutes.
- Warm the refried beans in a separate pan.
- Assemble by placing a tortilla on a plate, topping with beans, an egg, salsa, avocado, and cheese.
- Season with salt and pepper.
Notes
For a spicier version, use hot salsa. Serve immediately for the best texture.
