Description

A classic Mexican breakfast dish featuring fried eggs on tortillas with salsa and beans.


Ingredients

  • 4 large eggs
  • 4 corn tortillas
  • 1 cup refried beans
  • 1 cup salsa
  • 1 avocado, sliced
  • 1/4 cup crumbled queso fresco
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Fry the tortillas one at a time until crisp, about 1-2 minutes per side. Remove and drain on paper towels.
  3. In the same skillet, cook the eggs sunny-side up until the whites are set, about 3-4 minutes.
  4. Warm the refried beans in a separate pan.
  5. Assemble by placing a tortilla on a plate, topping with beans, an egg, salsa, avocado, and cheese.
  6. Season with salt and pepper.

Notes

For a spicier version, use hot salsa. Serve immediately for the best texture.
