Description

A savory Italian-inspired meatloaf packed with Sicilian flavors including sun-dried tomatoes, olives, and herbs.


Ingredients

Scale
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes
  • 1/2 cup chopped kalamata olives
  • 2 eggs
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, sun-dried tomatoes, olives, eggs, garlic, basil, oregano, salt, and pepper.
  3. Mix well until all ingredients are evenly incorporated.
  4. Shape the mixture into a loaf and place in a greased loaf pan.
  5. Drizzle olive oil over the top.
  6. Bake for 45-50 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing.

Notes

Serve with a side salad or marinara sauce for an authentic Sicilian touch. Store leftovers in the fridge for up to 3 days.
