For the Crust:
- 4 slices of whole grain bread
- 2 ripe avocados
- 4 slices of bacon
- 4 eggs
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Toast the slices of bread until golden brown.
- In a pan, cook the bacon until crisp. Remove and drain on paper towels.
- Mash the avocados in a bowl and season with salt and pepper. Spread the avocado mixture on the toasted bread.
- In the same pan used for the bacon, fry the eggs to your desired level of doneness.
- Top each slice of toast with crispy bacon and a fried egg. Serve immediately.
