- 2 slices of whole-grain bread
- 1 ripe avocado, halved and pitted
- 2 large eggs
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Toast the bread slices until golden brown.
- In a bowl, mash the avocado with a fork and season with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Beat the eggs in a bowl, then pour into the skillet and scramble until cooked through.
- Spread the mashed avocado on the toasted bread.
- Top with scrambled eggs and halved cherry tomatoes.
Notes
For a vegan version, substitute eggs with tofu scramble.
