Description

A simple, nutritious breakfast featuring creamy avocado on toasted bread, topped with fluffy scrambled eggs and fresh cherry tomatoes.


Ingredients

Scale
  • 2 slices of whole-grain bread
  • 1 ripe avocado, halved and pitted
  • 2 large eggs
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Toast the bread slices until golden brown.
  2. In a bowl, mash the avocado with a fork and season with salt and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Beat the eggs in a bowl, then pour into the skillet and scramble until cooked through.
  5. Spread the mashed avocado on the toasted bread.
  6. Top with scrambled eggs and halved cherry tomatoes.

Notes

For a vegan version, substitute eggs with tofu scramble.
