Ingredients

  • 1 ripe avocado, halved, pitted, and peeled
  • 2 large eggs
  • 100g smoked salmon slices
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Optional: Fresh herbs like chives or dill for garnish

Instructions

  1. Toast the bread slices in a toaster until golden brown.
  2. In a saucepan, bring water to a gentle simmer. Add a splash of vinegar if desired, then carefully crack the eggs into the water and poach for 3-4 minutes until the whites are set but yolks are runny.
  3. While the eggs are poaching, mash the avocado in a bowl with lemon juice, salt, and pepper.
  4. Spread the mashed avocado evenly on the toasted bread slices.
  5. Top each slice with smoked salmon and a poached egg.
  6. Season with additional salt, pepper, and fresh herbs if using, then serve immediately.

Notes

For a vegan version, omit the egg and smoked salmon, and add sliced tomatoes or cucumbers instead. Ensure the eggs are fresh for the best poaching results.
