Ingredients

  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup milk
  • 2 cups diced apples
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, beat the eggs, then stir in the milk and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the diced apples gently.
  6. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 15-20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. While the fritters cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  9. Drizzle the glaze over the cooled fritters and let it set before serving.

Notes

These fritters are best served fresh, but can be stored in an airtight container for up to 2 days. For a crispier texture, try baking at a higher temperature.
