A healthy and delicious baked falafel made from chickpeas and quinoa, perfect for a flavorful main course.

For the Crust:

  • 1 cup cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 small onion, finely chopped

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
  2. In a food processor, combine quinoa, chickpeas, onion, garlic, parsley, and spices until well blended.
  3. Shape the mixture into small patties and place them on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown.
