Description

A flavorful baked cod fillet served in a creamy sauce made with coconut milk and fresh lemon, perfect for a light and healthy meal.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together coconut milk, lemon juice, minced garlic, turmeric, salt, and black pepper.
  3. Heat olive oil in a skillet over medium heat. Sear the cod fillets for 2 minutes on each side until lightly golden.
  4. Transfer the cod to a baking dish and pour the coconut lemon cream sauce over the fillets.
  5. Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Garnish with fresh cilantro before serving.

Notes

For a spicier version, add red pepper flakes to the sauce. Pair with steamed vegetables or rice for a complete meal.
