- 4 cod fillets (about 6 oz each)
- 1 can (13.5 oz) coconut milk
- 2 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together coconut milk, lemon juice, minced garlic, turmeric, salt, and black pepper.
- Heat olive oil in a skillet over medium heat. Sear the cod fillets for 2 minutes on each side until lightly golden.
- Transfer the cod to a baking dish and pour the coconut lemon cream sauce over the fillets.
- Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with fresh cilantro before serving.
Notes
For a spicier version, add red pepper flakes to the sauce. Pair with steamed vegetables or rice for a complete meal.
