- 4 cod fillets (about 6 oz each)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 cup coconut milk
- 1/2 cup heavy cream
- 1 lemon, juiced and zested
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season cod fillets with salt and pepper.
- Heat butter and olive oil in a skillet over medium heat.
- Sear cod fillets for 2-3 minutes per side until lightly browned.
- Transfer to a baking dish.
- In the same skillet, add garlic and sauté for 1 minute.
- Pour in coconut milk, cream, lemon juice, and zest. Simmer for 5 minutes.
- Pour sauce over cod and bake for 10-15 minutes until cod flakes easily.
- Garnish with parsley and serve.
Notes
Use fresh cod for best results. Adjust lemon to taste for more tanginess.
