Description

Tender, flaky cod fillets are baked to perfection and smothered in a rich, creamy, and garlicky Parmesan sauce for an elegant yet easy weeknight meal.

For the Crust:

  • 4 (6 oz) cod fillets
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp onion powder
  • 1 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Pat cod fillets dry and place them in a single layer in a greased baking dish. Drizzle with olive oil and season with paprika, salt, and pepper.
  2. Bake the cod for 12-15 minutes, or until it flakes easily with a fork.
  3. While the cod bakes, prepare the sauce. In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sautรฉ for 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated Parmesan cheese and onion powder. Continue to simmer for 2-3 minutes until the sauce has thickened slightly.
  5. Remove the baked cod from the oven. Spoon the Parmesan cream sauce over the top of each fillet. Garnish with fresh parsley and serve immediately.

You can customize the seasonings to taste.
