Description

A baked Hawaiian chicken dish marinated in a sweet and savory sauce, perfect for a tropical meal.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and rice vinegar.
  2. Add chicken thighs to the marinade, cover, and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat oven to 375°F (190°C).
  4. Remove chicken from marinade and place on a baking sheet lined with foil.
  5. Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C), basting with marinade halfway through.
  6. Let rest for 5 minutes before serving.

Notes

For a grilled version, cook on a barbecue for extra smoky flavor. Serve with steamed rice and grilled pineapple.
