- 4 boneless, skinless chicken thighs
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon rice vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and rice vinegar.
- Add chicken thighs to the marinade, cover, and refrigerate for at least 2 hours or overnight for best flavor.
- Preheat oven to 375°F (190°C).
- Remove chicken from marinade and place on a baking sheet lined with foil.
- Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C), basting with marinade halfway through.
- Let rest for 5 minutes before serving.
Notes
For a grilled version, cook on a barbecue for extra smoky flavor. Serve with steamed rice and grilled pineapple.
