Ingredients

- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon lemon zest
Instructions
- Preheat the oven to 375°F (190°C).
- Lay out the salmon fillets and season with salt, pepper, and lemon zest.
- In a bowl, mix cream cheese, garlic, and chopped spinach.
- Spread the mixture over the salmon fillets and roll them up tightly.
- Secure with toothpicks if needed and place in a baking dish.
- Drizzle with olive oil and bake for 20-25 minutes until cooked through.
- Let rest for 5 minutes before slicing and serving.
