Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay out the salmon fillets and season with salt, pepper, and lemon zest.
  3. In a bowl, mix cream cheese, garlic, and chopped spinach.
  4. Spread the mixture over the salmon fillets and roll them up tightly.
  5. Secure with toothpicks if needed and place in a baking dish.
  6. Drizzle with olive oil and bake for 20-25 minutes until cooked through.
  7. Let rest for 5 minutes before slicing and serving.

Notes
