- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 2 tablespoons Thai red curry paste
- 1 can (14 oz) coconut milk
- 2 ripe avocados
- 1 stalk lemongrass, finely chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix shrimp with coconut milk, red curry paste, and shredded coconut.
- Arrange shrimp on a baking sheet and bake for 15-20 minutes until cooked through.
- For guacamole, mash avocados and mix with lemongrass, lime juice, salt, and pepper.
- Serve shrimp with guacamole on the side.
Notes
