- 8 oz large button mushrooms, stems removed
- 4 oz goat cheese, softened
- 1/2 cup fresh cranberries, chopped
- 1 cup fresh spinach, finely chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a bowl, mix goat cheese, chopped cranberries, chopped spinach, minced garlic, salt, and pepper until well combined.
- Stuff each mushroom cap with the cheese mixture.
- Place stuffed mushrooms on a baking sheet and drizzle with olive oil.
- Bake for 15-20 minutes until mushrooms are tender.
- In a small saucepan, heat balsamic vinegar over medium heat until it reduces and thickens, about 5 minutes.
- Remove mushrooms from oven and brush with the balsamic glaze.
- Serve warm.
