Ingredients

  • 8 oz large button mushrooms, stems removed
  • 4 oz goat cheese, softened
  • 1/2 cup fresh cranberries, chopped
  • 1 cup fresh spinach, finely chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a bowl, mix goat cheese, chopped cranberries, chopped spinach, minced garlic, salt, and pepper until well combined.
  3. Stuff each mushroom cap with the cheese mixture.
  4. Place stuffed mushrooms on a baking sheet and drizzle with olive oil.
  5. Bake for 15-20 minutes until mushrooms are tender.
  6. In a small saucepan, heat balsamic vinegar over medium heat until it reduces and thickens, about 5 minutes.
  7. Remove mushrooms from oven and brush with the balsamic glaze.
