This indulgent cheesecake combines ripe bananas, gooey caramel, and crunchy nuts for a rich dessert.

- Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- Filling:
- 4 ripe bananas, mashed
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup caramel sauce
- 1 cup chopped nuts (such as pecans or walnuts)
Instructions
- Preheat oven to 325°F (163°C).
- Prepare the crust: Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- For the filling: In a large bowl, beat cream cheese and sugar until smooth. Add mashed bananas, vanilla, and eggs one at a time, mixing well after each.
- Stir in caramel sauce and chopped nuts.
- Pour the filling over the cooled crust and bake for 50-60 minutes, or until the center is set.
- Cool in the pan, then refrigerate for at least 4 hours before serving.
Notes
For a nut-free version, substitute with chocolate chips. Store in the refrigerator for up to 5 days.
