For the Crust:

  • 1 cup crushed vanilla wafers
  • 2 tablespoons melted butter
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 box instant banana pudding mix
  • 1 1/2 cups cold milk
  • 2 bananas, sliced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325ยฐF (163ยฐC). Grease a 9-inch springform pan.
  2. Mix crushed vanilla wafers with melted butter, press into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, then vanilla extract. Mix in sour cream until fully combined.
  4. Pour cheesecake batter over crust. Bake for 30 minutes, or until set. Allow to cool completely.
  5. Whisk banana pudding mix with cold milk in a medium bowl until thickened. Layer over cheesecake along with banana slices.
  6. Chill the entire cheesecake in the refrigerator for at least 4 hours before serving.
