A Basque classic dish featuring cod and potatoes topped with a fresh salsa verde.

- 4 cod fillets
- 500g potatoes, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- For salsa verde:
- 1 bunch fresh parsley
- 2 garlic cloves
- 1 tablespoon capers
- 100ml olive oil
- Juice of 1 lemon
Instructions
- Preheat the oven to 200°C.
- Boil the potatoes in salted water until tender, about 15 minutes, then drain.
- Season the cod fillets with salt and pepper, and drizzle with olive oil.
- Place the cod and potatoes in a baking dish and bake for 15-20 minutes until the cod is cooked through.
- For the salsa verde, blend parsley, garlic, capers, olive oil, and lemon juice until smooth.
- Serve the cod and potatoes topped with salsa verde.

This dish pairs well with a crisp white wine. Ensure the cod is fresh for the best flavor.
