- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 flour tortillas
- 2 cups shredded cheese
- For the sauce: 2 tablespoons vegetable oil
- 2 tablespoons flour
- 2 tablespoons chili powder
- 1 can (14.5 oz) tomato sauce
- 1 1/2 cups beef broth
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, cook ground beef over medium heat until browned. Drain fat.
- Add onion and garlic to the skillet and cook until softened.
- Stir in chili powder, cumin, salt, and pepper.
- In a separate saucepan, heat oil over medium heat. Stir in flour and chili powder to make a roux.
- Gradually add tomato sauce and beef broth, stirring until thickened.
- Fill each tortilla with beef mixture and some cheese, then roll up.
- Place enchiladas in a baking dish and cover with sauce.
- Top with remaining cheese and bake for 20-25 minutes until bubbly.
Notes
Serve with sour cream and guacamole for extra flavor.
