Description

A refreshing salad combining fresh berries and creamy avocado, perfect for a light meal.

Ingredients

Scale
  • 2 cups mixed berries (such as strawberries, blueberries, and raspberries)
  • 1 ripe avocado, sliced
  • 4 cups fresh spinach leaves
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and prepare the mixed berries by removing any stems and cutting larger berries in half.
  2. Slice the avocado and arrange it on a bed of fresh spinach leaves in a large salad bowl.
  3. Add the red onion and feta cheese to the salad.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve immediately for the best flavor and texture.

Notes

This salad is best enjoyed fresh; add the dressing just before serving to prevent sogginess. Optional: Add nuts for extra crunch.
