For the Crust:
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large apple, julienned
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine the green cabbage, red cabbage, apple, cranberries, and cilantro.
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, ginger, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss until evenly coated. Refrigerate for at least 30 minutes before serving.
