For the Crust:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1 (3.4 oz) package instant banana pudding mix
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325ยฐF (165ยฐC). Grease and flour a 10-inch Bundt pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture, alternating with milk, beginning and ending with the flour mixture.
  4. Stir in banana pudding mix, mashed bananas, and vanilla extract until well combined.
  5. Pour batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
