Spicy Cajun chicken bites served over creamy cheesy Alfredo linguine for a flavorful and satisfying meal.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 8 oz linguine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Set aside.
  3. Cook the linguine according to package instructions until al dente. Drain and set aside.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and sautรฉ for 1 minute until fragrant.
  5. Pour in the heavy cream, stirring constantly. Bring to a simmer, then reduce heat and stir in Parmesan and mozzarella cheeses until melted and smooth.
  6. Add the cooked linguine to the Alfredo sauce, tossing to coat evenly. Season with salt and pepper to taste.
  7. Serve the Cajun chicken bites over the cheesy Alfredo linguine. Garnish with fresh parsley.
