A refreshing and crunchy coleslaw salad with tender chicken and a zesty ginger sesame dressing.

For the Crust:

  • 2 cups shredded cooked chicken
  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup toasted sesame seeds
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine shredded chicken, green cabbage, red cabbage, carrot, green onions, and cilantro.
  2. In a small bowl, whisk together olive oil, rice vinegar, soy sauce, honey, ginger, garlic, and sesame oil until well combined.
  3. Pour the dressing over the salad and toss until evenly coated.
  4. Sprinkle toasted sesame seeds on top and season with salt and pepper to taste.
  5. Serve immediately or refrigerate for up to 2 hours before serving for enhanced flavor.
