For the Crust:
- 2 cups shredded cooked chicken
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large carrot, julienned
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup toasted sesame seeds
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon freshly grated ginger
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine shredded chicken, green cabbage, red cabbage, carrot, green onions, and cilantro.
- In a small bowl, whisk together olive oil, rice vinegar, soy sauce, honey, ginger, garlic, and sesame oil until well combined.
- Pour the dressing over the salad and toss until evenly coated.
- Sprinkle toasted sesame seeds on top and season with salt and pepper to taste.
- Serve immediately or refrigerate for up to 2 hours before serving for enhanced flavor.
