Description
A flavorful marinade for chicken kabobs that’s quick and easy to prepare, perfect for grilling.
Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- Fresh herbs like parsley or cilantro for garnish
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, black pepper, and cayenne pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers, leaving a little space between pieces.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove from the grill and let rest for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For best results, use fresh ingredients and don’t over-marinate to avoid making the chicken too acidic. Pair with grilled vegetables or rice.
