Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • Fresh herbs like parsley or cilantro for garnish

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, black pepper, and cayenne pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers, leaving a little space between pieces.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Remove from the grill and let rest for a few minutes before serving. Garnish with fresh herbs if desired.
