For the Crust:

  • 2 lbs beef chuck roast, cut into chunks
  • 2 tbsp olive oil
  • 2 large onions, sliced
  • 2 apples, cored and sliced
  • 2 cups apple cider
  • 1 cup beef broth
  • 2 tbsp apple cider vinegar
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef chunks on all sides, then remove and set aside.
  2. In the same pot, add onions and cook until softened and caramelized, about 10 minutes.
  3. Stir in apples, thyme, salt, and pepper. Cook for 2 minutes.
  4. Sprinkle flour over the mixture and stir to coat. Pour in apple cider, beef broth, and apple cider vinegar, scraping up any browned bits.
  5. Return the beef to the pot. Bring to a simmer, then cover and cook on low heat for 2 hours, or until beef is tender.
  6. Serve hot, garnished with fresh thyme if desired.
