  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Rinse quinoa under cold water and cook in 2 cups of water according to package instructions.
  2. Heat olive oil in a pan over medium heat. Add diced chicken and cook until no longer pink.
  3. Add bell pepper, zucchini, garlic powder, paprika, salt, and pepper. Sautรฉ until vegetables are tender.
  4. Serve cooked quinoa topped with the chicken and vegetable mixture.
