For the Crust:
- 1 lb fresh crab meat
- 1 lb shrimp, peeled and deveined
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup dry sherry
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- In a large pot, melt butter over medium heat. Add onion and garlic, sautรฉ until translucent.
- Whisk in flour to form a roux, cooking for 2 minutes until lightly golden.
- Gradually pour in seafood stock, stirring constantly to avoid lumps. Bring to a simmer.
- Add crab meat, shrimp, sherry, paprika, cayenne, salt, and black pepper. Simmer for 10 minutes.
- Stir in heavy cream and simmer for another 5 minutes until slightly thickened.
- Garnish with fresh parsley before serving.
