A rich and velvety seafood bisque loaded with crab and shrimp, perfect for a luxurious meal.

For the Crust:

  • 1 lb fresh crab meat
  • 1 lb shrimp, peeled and deveined
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry sherry
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sautรฉ until translucent.
  2. Whisk in flour to form a roux, cooking for 2 minutes until lightly golden.
  3. Gradually pour in seafood stock, stirring constantly to avoid lumps. Bring to a simmer.
  4. Add crab meat, shrimp, sherry, paprika, cayenne, salt, and black pepper. Simmer for 10 minutes.
  5. Stir in heavy cream and simmer for another 5 minutes until slightly thickened.
  6. Garnish with fresh parsley before serving.
