For the Crust:
- 1 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 cups chopped kale
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces.
- Add diced onion and minced garlic to the pot. Sautรฉ until onions are translucent and fragrant.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes.
- Reduce heat to low and let the soup simmer for 15 minutes, stirring occasionally.
- Add chopped kale and cook for another 5 minutes until wilted. Season with salt and pepper to taste.
- Serve hot with extra Parmesan cheese on top if desired.
