For the Crust:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded Tuscano cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chopped spinach

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautรฉ until softened.
  2. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, and Tuscano cheese until melted and smooth.
  3. Add thyme, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  4. Stir in chopped spinach and cook for another 5 minutes until wilted.
  5. Serve hot with crusty bread or additional cheese on top.
