For the Crust:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded Tuscano cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chopped spinach
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautรฉ until softened.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, and Tuscano cheese until melted and smooth.
- Add thyme, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
- Stir in chopped spinach and cook for another 5 minutes until wilted.
- Serve hot with crusty bread or additional cheese on top.
