  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cut into pieces

  • For the Filling:
  • 8 cups thinly sliced apples (about 8 medium apples)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • For the Streusel Topping:
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the crust: In a large bowl, whisk together flour, salt, and sugar. Add chilled butter and cut it into the flour mixture until it resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Preheat the oven to 400 degrees F (200 degrees C).
  3. Roll out one disk of dough on a floured surface to fit a 9-inch pie plate. Transfer to the pie plate and trim the edges.
  4. Make the filling: In a large bowl, toss sliced apples with sugars, flour, cinnamon, nutmeg, salt, and lemon juice. Pour into the prepared crust.
  5. Make the streusel: In a medium bowl, combine flour, brown sugar, butter, and cinnamon until crumbly. Sprinkle over the apple filling.
  6. Roll out the second disk of dough and cut into strips for a lattice top, or simply cover with the second crust and seal the edges.
  7. Bake for 45-55 minutes, or until the crust is golden and the filling is bubbly. If the edges brown too quickly, cover with foil.
  8. Cool on a wire rack before serving.

Notes

Allow the pie to cool completely for the best texture. Serve with vanilla ice cream for an extra treat.
