- 2 large eggs, beaten
- 1 cup mixed vegetables (like peas, carrots, and bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and stir-fry for 1 minute until fragrant.
- Pour in the beaten eggs and scramble them until just cooked.
- Add the mixed vegetables and cook for 2-3 minutes.
- Stir in the cooked rice and soy sauce, mixing everything together.
- Season with salt and pepper, and cook for another 2 minutes until heated through.
- Serve hot.
Notes
For best results, use day-old rice to prevent it from becoming mushy. Adjust soy sauce for desired saltiness.
