For the Crust:
- 1 lb rigatoni pasta
- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp Cajun seasoning
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Cook the rigatoni according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken slices and season with Cajun seasoning, salt, and black pepper. Cook until browned and fully cooked, about 6-8 minutes.
- Add minced garlic to the skillet and sautรฉ for 1 minute until fragrant.
- Pour in the heavy cream and stir well. Let it simmer for 2-3 minutes until slightly thickened.
- Add the cooked rigatoni to the skillet and toss to coat evenly with the sauce.
- Sprinkle mozzarella and Parmesan cheese over the pasta. Cover the skillet and let it melt for 2-3 minutes.
- Garnish with red pepper flakes if desired and serve hot.
