Ingredients

  • 4 cups chicken broth

  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • Green onions for garnish

Instructions

  1. In a large pot, combine potatoes, onion, celery, carrots, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  2. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  3. Gradually whisk in milk and cook until thickened.
  4. Add the milk mixture to the potato mixture and stir to combine.
  5. Stir in cheddar cheese, bacon, and sour cream until melted and heated through.
