For the Crust:
- 1 rotisserie chicken, shredded
- 8 oz mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, heat butter and olive oil over medium heat. Add onions and garlic, sautรฉ until fragrant.
- Add mushrooms and cook until softened, about 5 minutes.
- Pour in chicken broth and bring to a simmer. Add shredded rotisserie chicken, thyme, and rosemary.
- Reduce heat and let simmer for 15 minutes. Stir in heavy cream and season with salt and pepper.
- Simmer for another 5 minutes, then serve hot.
