For the Crust:

  • 1 rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, heat butter and olive oil over medium heat. Add onions and garlic, sautรฉ until fragrant.
  2. Add mushrooms and cook until softened, about 5 minutes.
  3. Pour in chicken broth and bring to a simmer. Add shredded rotisserie chicken, thyme, and rosemary.
  4. Reduce heat and let simmer for 15 minutes. Stir in heavy cream and season with salt and pepper.
  5. Simmer for another 5 minutes, then serve hot.
