Description

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. In a large skillet, heat olive oil over medium heat and brown the chicken on both sides.
  3. Remove chicken and sautรฉ onion, garlic, and bell pepper until softened.
  4. Add rice and chicken broth, then return chicken to the skillet.
  5. Cover and simmer for 20-25 minutes until rice is cooked and chicken is tender.
  6. Serve hot.

Notes

For a creamier version, add a splash of cream at the end.
