- 4 boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- In a large skillet, heat olive oil over medium heat and brown the chicken on both sides.
- Remove chicken and sautรฉ onion, garlic, and bell pepper until softened.
- Add rice and chicken broth, then return chicken to the skillet.
- Cover and simmer for 20-25 minutes until rice is cooked and chicken is tender.
- Serve hot.

For a creamier version, add a splash of cream at the end.
