A flavorful and spicy chicken bowl with a sweet honey-ginger glaze and creamy yum yum sauce, served over rice and fresh veggies.

For the Crust:
- 1.5 lbs boneless, skinless chicken thighs
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tsp red pepper flakes
- 1 tbsp olive oil
- 2 cups cooked white rice
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tbsp rice vinegar
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, soy sauce, ginger, garlic, and red pepper flakes to make the marinade. Reserve half for later.
- Add chicken thighs to the remaining marinade, coating evenly. Let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked. Brush with reserved marinade during the last 2 minutes.
- In a small bowl, mix mayonnaise, ketchup, paprika, garlic powder, and rice vinegar to make the yum yum sauce.
- Assemble bowls with rice, sliced chicken, carrots, and cucumbers. Drizzle with yum yum sauce and serve.
