For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup pureed fresh strawberries
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat butter, eggs, vanilla, and strawberry puree until smooth. Gradually mix in dry ingredients, alternating with buttermilk.
- Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat cream cheese until smooth. Add heavy cream, powdered sugar, and vanilla. Whip until stiff peaks form.
- Frost the cooled cake layers and garnish with fresh strawberries if desired.
