For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup pureed fresh strawberries
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat butter, eggs, vanilla, and strawberry puree until smooth. Gradually mix in dry ingredients, alternating with buttermilk.
  4. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. For frosting, beat cream cheese until smooth. Add heavy cream, powdered sugar, and vanilla. Whip until stiff peaks form.
  6. Frost the cooled cake layers and garnish with fresh strawberries if desired.
