Description

A creamy and aromatic Thai soup made with coconut milk, chicken, galangal, lemongrass, and kaffir lime leaves, perfect for a comforting meal.


Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 1 cup mushrooms, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pot over medium heat.
  2. Add onion, garlic, and ginger; sauté until fragrant.
  3. Add lemongrass and kaffir lime leaves; cook for 1 minute.
  4. Add chicken and cook until it starts to brown.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Stir in coconut milk, mushrooms, fish sauce, and chili paste.
  8. Simmer for another 5-10 minutes until flavors meld.
  9. Remove from heat and add lime juice.
  10. Garnish with fresh cilantro and serve hot.

Notes

For an authentic flavor, use fresh galangal if available. Adjust spiciness to taste.
