- 1 tablespoon coconut oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 1 pound chicken breast, sliced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 1 cup mushrooms, sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon chili paste
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a pot over medium heat.
- Add onion, garlic, and ginger; sauté until fragrant.
- Add lemongrass and kaffir lime leaves; cook for 1 minute.
- Add chicken and cook until it starts to brown.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in coconut milk, mushrooms, fish sauce, and chili paste.
- Simmer for another 5-10 minutes until flavors meld.
- Remove from heat and add lime juice.
- Garnish with fresh cilantro and serve hot.
Notes
For an authentic flavor, use fresh galangal if available. Adjust spiciness to taste.
