For the Crust:
- 2 cups chocolate cookie crumbs
- 3 tablespoons unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cocoa powder
- 1 cup cherry pie filling
- 1/4 cup heavy cream
- 1/4 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 325ยฐF (165ยฐC) and grease a 9-inch springform pan.
- Combine chocolate cookie crumbs and melted butter in a bowl. Press mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, incorporating well after each addition. Mix in vanilla and cocoa powder.
- Pour the cream cheese mixture over the crust in the springform pan and smooth the top.
- Bake for 45-50 minutes until set. Allow to cool completely in the pan.
- Spread cherry pie filling over the cooled cheesecake.
- In a small saucepan, heat heavy cream over low heat. Add chocolate chips and stir until melted and smooth. Drizzle chocolate ganache over the cherry topping.
- Chill the cheesecake in the refrigerator for at least 4 hours before serving.
