A rich and indulgent cheesecake with layers of chocolate, cherries, and a creamy cheese filling, perfect for special occasions.

For the Crust:

  • 2 cups chocolate cookie crumbs
  • 3 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1 cup cherry pie filling
  • 1/4 cup heavy cream
  • 1/4 cup semi-sweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325ยฐF (165ยฐC) and grease a 9-inch springform pan.
  2. Combine chocolate cookie crumbs and melted butter in a bowl. Press mixture into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, incorporating well after each addition. Mix in vanilla and cocoa powder.
  4. Pour the cream cheese mixture over the crust in the springform pan and smooth the top.
  5. Bake for 45-50 minutes until set. Allow to cool completely in the pan.
  6. Spread cherry pie filling over the cooled cheesecake.
  7. In a small saucepan, heat heavy cream over low heat. Add chocolate chips and stir until melted and smooth. Drizzle chocolate ganache over the cherry topping.
  8. Chill the cheesecake in the refrigerator for at least 4 hours before serving.
