- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips, melted
- Topping:
- 1 can (21 oz) cherry pie filling
- 1/2 cup whipped cream
- Chocolate shavings for garnish
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the pan to form the crust.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and melted chocolate.
- Pour the filling over the crust and smooth the top. Bake for 55-60 minutes or until the center is set.
- Allow the cheesecake to cool completely, then refrigerate for at least 4 hours.
- Before serving, top with cherry pie filling, whipped cream, and chocolate shavings.
